For the Usal (Sprouts Curry):




  • 1 cup mixed sprouts (moth beans preferred; moong or chana also work)




  • 1 tbsp oil




  • 1 tsp mustard seeds




  • ½ tsp cumin seeds




  • 1 pinch hing (asafoetida)




  • 1 onion, finely chopped




  • 1 tsp ginger-garlic paste




  • 1 tomato, finely chopped




  • ¼ tsp turmeric powder




  • 1½ tsp red chili powder (adjust to taste)




  • 1 tsp garam masala or misal masala




  • Salt to taste




  • 2–3 cups water (as needed for gravy)




  • Fresh coriander for garnish




For the Kat (Spicy Gravy - optional):




  • 1 tbsp oil




  • 1 tbsp misal masala (or garam masala + chili powder mix)




  • 1 cup water




  • Salt to taste




  • A pinch of jaggery (optional)




For Serving:




  • 6–8 pav buns




  • 1 cup farsan or sev




  • 1 small onion, finely chopped




  • Lemon wedges




  • Fresh coriander leaves




  • Butter (optional, for toasting pav)

1. Prepare the Usal (Base Curry):




  1. Heat oil in a pan, add mustard seeds and cumin. Let them splutter.




  2. Add hing, then onions. Sauté till golden.




  3. Add ginger-garlic paste; cook till raw smell goes away.




  4. Add tomatoes and cook till soft.




  5. Add turmeric, chili powder, and masala. Mix well.




  6. Add the boiled sprouts and salt. Sauté for a minute.




  7. Pour water to make a thin gravy and simmer for 10–12 minutes.




2. Prepare the Kat (Spicy Layer - optional):




  1. Heat oil, add misal masala, and sauté briefly.




  2. Add water and a pinch of jaggery. Boil for 5–6 mins.




  3. Pour this over the usal before serving for extra spice.




3. Toast the Pav:




  • Heat a tawa with butter. Slice pav buns and toast until golden and crisp.

  1. In a bowl, add a ladle of usal.




  2. Pour a spoon of kat over it (if using).




  3. Top with chopped onions, farsan, and fresh coriander.




  4. Serve with buttered pav and lemon wedges on the side.
