Ingredients


For the Bhaji:




  • 2 tbsp butter (plus more for serving)




  • 1 tbsp oil




  • 1 tsp cumin seeds




  • 1 large onion, finely chopped




  • 1 tbsp ginger-garlic paste




  • 2 large tomatoes, finely chopped




  • ½ cup green peas (boiled)




  • 1 cup boiled potatoes, mashed




  • ½ cup boiled cauliflower, finely chopped




  • ½ cup boiled carrots, finely chopped




  • ½ cup capsicum, finely chopped




  • 1½ tbsp pav bhaji masala




  • ½ tsp red chili powder




  • Salt to taste




  • ½ tsp turmeric (optional)




  • Juice of ½ lemon




  • Fresh coriander, chopped




  • Water as needed




For the Pav:




  • 8 pav buns




  • 2–3 tbsp butter




  • A pinch of pav bhaji masala








Instructions


Step 1: Prepare the Bhaji




  1. Heat butter and oil in a large pan or tawa.




  2. Add cumin seeds, let them splutter.




  3. Add onions and sauté until golden brown.




  4. Add ginger-garlic paste; cook for 1 minute until raw smell disappears.




  5. Add tomatoes and cook until soft and mushy.




  6. Add all boiled/mashed vegetables: potatoes, peas, carrots, cauliflower, and capsicum.




  7. Mix well and mash everything using a potato masher directly in the pan.




  8. Add pav bhaji masala, red chili powder, turmeric (if using), and salt.




  9. Pour in some water to get the right consistency. Simmer for 10–15 minutes while mashing occasionally.




  10. Finish with lemon juice and fresh coriander. Add more butter if desired.




Step 2: Toast the Pav




  1. Slice pav buns horizontally.




  2. Heat butter on a tawa, sprinkle a little pav bhaji masala.




  3. Toast buns until golden and crisp.








Serving




  • Serve hot bhaji with buttered pav, a wedge of lemon, and chopped onions.
