  • 2 cups besan (gram flour)




  • 1 cup powdered sugar (adjust to taste)




  • ½ cup ghee (clarified butter)




  • ½ tsp cardamom powder




  • 2 tbsp chopped nuts (optional – almonds, cashews, pistachios)








Instructions


Step 1: Roast the Besan





  • Heat ghee in a heavy-bottomed pan on low flame.




  • Add besan and roast on low flame, stirring continuously.




  • Roast for 15–20 minutes until it turns golden brown and gives a nutty aroma.




  • Make sure there are no raw lumps. The texture should become smooth and slightly glossy.




Step 2: Cool the Mixture





  • Turn off the heat and allow the mixture to cool slightly.




  • It should be warm (not hot) when you add sugar—this helps prevent the sugar from melting.




Step 3: Add Sugar and Flavoring





  • Add powdered sugar and cardamom powder.




  • Mix well until combined evenly.
